1 tsp olive oil1/2 cup thinly sliced onion ring1/2 cup diced red bell pepper1 clove garlic1 cup chopped tomatoes1 tbsp capers1/4 tsp ground cumin1/8 tsp red pepper flakes1 (6 oz) cod fillets
In a large nonstick pan over medium high heat 1 tsp olive oil, add 1/2 cup thinly sliced onion separated into rings, 1/2 cup red bell pepper, and 1 garlic clove minced, saute 2 minutes. Add 1 cup chopped tomatoes, cumin, red pepper flakes, capers. Cook over medium high heat 5 minutes stirring occasionally.
Add 2 6oz cod fillets spooning sauce over fish. Cover and cook 10 minutes or until fish flakes easily with fork.
(For frozen fillets, double the time)
