Orange Pineapple Carrot Jello Salad

Sugar free Jello gelatin; large box (0.60 oz); 8 servings size in either orange or lemon flavor1 large raw carrot - grated fine if possible but coarse works too1/2 cup crushed pineapple in pineapple juice1 cup pineapple juice (from above)3 cups water
Drain and save pineapple juice from can of crushed pineapple. Using a 20oz can of crushed pineapple you will have 1 cup of juice and left over crushed pineapple. It helps to squeeze the pineapple well to keep your liquids in the right quantities. Place grated carrot and pineapple in a serving bowl. Bring 2 cups of water to a boil, add jello and dissolve. Add pineapple juice and 1 cup of cold water - mix well. Pour over carrots and pineapple. Chill stirring frequently to keep the freggies well distributed. Generally sets in approximatelyy 4 hours.
