Quinoa Vegetable Side Dish

Ingredients
Quinoa (1 cup)Yellow Pepper (diced)Shiitake Mushroom (2 diced)Fajita Sauce (4 tbsp)Water (2 cups)Cheese, parmesan to garnish
Directions
In a rice cooker, pour 1 cup of quinoa, 2 cups water, 4 tbsp of fajita sauce/marinade (or marinade of choice), 1 diced bell pepper, and 2 diced shiitake mushrooms (or mushroom of choice). Let cook for 20 minutes or until rice cooker is finished.
