Fresh Peach Cobbler

1/2 cup sugar1 tbsp tapioca4 cups fresh peaches with skin, pitted and sliced1 tsp lemon juice3 tbsp vegetable shortening1 cup AP flour1 tbsp sugar1 1/2 tsp baking powder1/2 tsp salt1/2 cup skim milk
Heat oven to 400F.
Mix sugar, tapioca and peaches in a heavy saucepan.
Cook stirring constantly until mixture thickens and boils and let simmer for one minute.
Pour into ungreased 2 qt casserole and put in oven to keep hot.
Cut shortening into the remaining dry ingredients until it resembles coarse sand.
Add milk and drop by spoonfuls onto hot peach mixture.
Bake for 25-30 minutes until topping is golden brown.
