4 ears corn on the cob, RAW2 medium tomatoes2 medium cucumbers˝ red onion choppedFresh Parsley˝ cup of FRESH lime juice2 tsp canola oil2 tsp sugarsalt & pepper to tasteCut corn from ears by standing the cob up on one side slicing downward. Chop tomatoes, cucumber and onion into bite size pieces. Finely chop parsley. Combine all ingredients into a large bowl. Meanwhile, whisk together lime juice, oil, sugar, salt & pepper in a small bowl. Pour dressing over salad and toss well. Enjoy.
