Artichoke Chicken Pilaf

One 6 oz. package Farmhouse® Rice Pilaf3/4 lb. boneless chicken, sliced1 clove garlic, minced2 Tablespoons butter or margarine2 cups water1/2 teaspoon crushed basilOne 6 oz. jar marinated artichokes, drained, rinsed and halved3 sliced scallions1/2 cup toasted sliced almonds
1.In a large skillet, sauté chicken and garlic in butter or margarine until chicken is no longer pink.
2.Add water, basil, rice and contents of seasoning packet; bring to a boil.
3.Reduce heat to low; cover and cook for 15 minutes.
4.Stir in artichokes and scallions; cook 5 minutes more.
5.Before serving, garnish with almonds.
Serving Size: Makes about 4 one and a half cup servings
