- 2 bunches curly kale- 1/2 C roasted.salted peanuts- 1 red bell pepper, sliced- 3-4 carrots, shredded or sliced- 1 T salt
chop all veggies and peanuts, place in large blow. whisk oil, vinegar, sugar, salt and pour over veggies. toss and coat all veggies.
can eat immediately, but best to let sit in fridge overnight to soften the kale.
