Bourbon Salmon

Marinade: teriyaki sauce , brown sugar , and 1 oz. bourbon fresh salmon filets fresh spinach olive oil
Combine teriyaki sauce , brown sugar , and bourbon - along with fish filets - in a sealable plastic bag , and allow to marinate for 2 - 3 hrs in the refrigerator.
Put 2 tsp of olive oil in a pan on medium high. Sear the salmon on both sides for @ 90 seconds per side. Pre-heat oven to 400 degrees. Put filets on a baking tray and cook for 20 minutes.
When 5 minutes of cooking time remains , put additional 2 tsp of olive oil in pan and saute spinach over medium heat . Serve fish over , or next to the spinach. I find it makes a nice complement to the fish.....I hope you like it.
