Ginger-Orange Shrimp Stir-Fry

Ingredients
1 large navel orange3.5 tbsp. low-sodium tamari (soy) sauce1 tsp. cornstarch4 tsp. minced garlic2 tsp. minced ginger1 tsp. Splenda 2 medium scallions, sliced1 tbsp. sesame oil14 oz. medium shrimp, raw, shelled w/tails on (about 24 shrimp)3.5 c. fresh snow peas1 can water chestnuts
Directions
Zest and juice the orange into a small saucepan. Add Tamari, cornstarch, garlic, ginger, Splenda, and scallions.Cook over low heat for 5 minutes, stirring frequently. Set aside.

Heat oil in large skillet or wok. Add shrimp and stir-fry until just slightly under-cooked. Remove and set aside. Stir-fry snow peas until tender crisp; add in water chestnuts, shrimp and sauce. Mix thoroughly and continue cooking until sauce is thickened and shrimp are cooked through.

Serve over brown rice (not included in nutrition calculations).
