Chia Seed Almond Pudding

Ingredients
2 cups Almond Breeze Unsweetened Vanilla Milk6-7 Tablespoons Chia seeds5 packets Splenda1 tsp vanilla extract
Directions
Combine Almond Breeze, splenda and vanilla. Stir in the chia seeds.

Stir the mixture every few minutes for the first 10 minutes or so and then just allow pudding to sit for about 30 minutes to an hour. It will be a little runny at first but it should solidify pretty shortly, it also gets stiffer overnight in the fridge.

Serve with berries (or bananas or anything else you like).

This is a great breakfast pudding considering its nutritional value. You can also blend it in a blender if you don't like the tapioca-like texture and it will be more like a regular pudding. You can also get really creative with this by using other types of milk (I hear coconut milk works great), blending different fruit into the milk, using different extracts, etc.

P.S. I find 6 tpsb of Chia seeds is enough for me but if this is too runny, a seventh spoon should do the trick.

    I tried it this way and also with a new product Almond Creamer (which already has the stevia in it - intended to be a coffee creamer)... just a little dab will do ya and soaks up the chia seeds into a nice creamy slurry pudding. Yum Yum Yum this is SO gonna be my favorite summer treat! - 5/13/16
