Zucchini Chips

- One medium zucchini (summer squash), sliced into "potato chips"- 1 Tbsp Low Sodium Soy Sauce- 1 tsp Liquid Smoke
Preheat oven to 450. Line a cookie sheet with parchment paper. Wash the zucchini then cut the ends off. Slice into 1/8-inch "chips" and then put them on the cookie sheet in a single layer. Bake for 10 minutes. Remove from oven, flip them over, and bake for another 10 minutes. Meanwhile, in a small bowl mix together the soy sauce and Liquid Smoke. Check the zucchini - they should look a little crisp by now. If not, cook a little longer. Remove from oven and dredge each slice through the sauce mixture, then put back on the cookie sheet. Bake for about 5 minutes then turn up to broil for another minute or so. Remove and let cool for about 5 minutes, then enjoy! Yummo!
