Eggplant Sichuanese Style

Ingredients
4C eggplant, cut in 1" cubes.75 lb ground pork1C green onions sliced in 1" lengths2 TBSP chile-bean paste (toban djan) or plain chile paste.25C peanut oil
Directions
Heat peanut oil to very hot on high heat in a wok or skillet. Add eggplant and stir-fry 3-4 minutes until about half cooked. Add pork and stir-fry until mostly done. Add Chile bean paste over to the side for 30 seconds until fragrant. Mix all together and add onions. Stir-fry for two minutes and serve over rice or noodles.
