High Fibre Bran Muffins

1 1/2 cup Fibre 1 cereal2 cup fat-free skim milk, soured with vinegar 41/2 egg white(s) 3 tsp ground cinnamon 1/2 cup unsweetened applesauce 1 1/2 cups water, boiling 3 tsp baking powder 2 1/2 tsp baking soda 1 1/2 cup uncooked wheat bran 1 cup grated carrots 2 1/2 cups whole wheat flour 1 mashed banana1/4 cup unpacked brown sugar 2 Tbsp ground flax seed1/8 cup Splenda or to taste
Pour boiling water over brans and let sit
Mix dry ingredients together in a bowl. Mix wet ingredients together in
a bowl. Combine both mixtures. Refrigerate overnight first then you can
keep uncooked batter in fridge for 5-7 days. Bake at 375 for 20 - 25 minutes. Makes 24 muffins.
Also can be baked immediately, though muffin comes out slightly drier.
