Pasta with Sausage and Cherry Tomatoes from Cook Yourself Thin Faster Book

Ingredients
Olive oil cooking spray 1/2 pound of pork sausages, removed from their castings and crumbled2 garlic cloves, finely chopped Pinch of hot pepper flakes16 cherry tomatos1 teaspoon chopped fresh thyme Salt and pepper7 ounces whole wheat linguine, cooked al dente 1 teaspoon extra virgin olive oil1 tablespoon chopped fresh parsley
Directions
1) Spray a large nonstick skillet with olive oil cooking spray and place over medium-high heat. Add the sausage and stir occasionally for about 3 minutes, until the meat begins to brown. Add the garlic, pepper, flakes, tomatoes, and thyme. Cook until the sausage turns dark brown and tomato skins have burst, about another 3 to 4 minutes. Season with salt and pepper.

2) Place the cooked pasta in a warm serving bowl and toss with extra virgin olive oil. Top the pasta with the sausage and tomato mixture, stir to combine, and sprinkle with parsley.

    Easy, GREAT Flavor and light. I left the sausage chunks fairly large and put a couple more cloves of garlic. Served over whole wheat thin spaghetti this was a delight my husband and I will enjoy again! - 8/24/13

    I adore this recipe. I made it tonight from my cookbook and was so excited to see that someone had already posted it so I could log it. We added a handful of spinach too! I made the others this dish with regular pasta and I held back some sausage mixture for myself with whole wheat pasta. Loved it! - 8/8/13
