Pepperoni Pizza Casserole

1 pkg. (16 oz) egg noodles2 lbs. ground turkey1/3 cup chopped onion1 jar (26 oz) meatless spaghetti sauce1 can (10 oz) diced tomatoes and green chilles1 can (8 oz) mushrooms stems and pieces, drained2 cups (8 oz) shredded part-skim mozzarella cheese2 cups (8 oz) shredded cheddar cheese1 cup (4 oz) shredded parmesan cheese3 oz. sliced turkey pepperoni
1. Cook noodles according to package instructions
2. Meanwhile, in large skillet, cook ground turkey and chopped onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and tomatoes. Bring to boil. Reduce heat and simmer uncovered for 5 min. Stir in noodles.
3. transfer to two greased 13 in. x 9 in. baking dishes. Sprinkle each with mushrooms, cheese and pepperoni.
4. Bake uncovered at 350 for 30-35 minutes or until heated through and cheeses have melted. Let stand for 5 minutes before serving.
Serving Size: makes 2 casseroles, 6 servings each
