Coconut Cinnamon Granola

Ingredients
8 cups rolled oats (not quick cooking - use gluten free if needed)1/2 cup brown sugar1/2 cup coconut oil (or your favorite oil)1/2 cup honey1 Tbs. cinnamon1 tsp. ground nutmeg1 Tbs. vanilla1 cup unsweetened coconut chips
Directions
In a large pot heat oil, brown sugar and honey until it's melted. Turn off heat, stir in cinnamon, nutmeg, vanilla and coconut chips. Add oats, and STIR WELL. Pourin a 9 x 13 pan and bak in a preheated 375 degree oven for 10 minutes. Turn off the oven and DO NOT OPEN until morning. In the morning stir and enjoy! If it's not quite crispy enough, you can bake it a bit more and let cool.
