Gluten And Dairy Free Lemon Souffle

Ingredients

½ cup superfine sugar2 tbsp white rice flour½ tsp salt2 eggs, separated1 c plain low-fat soymilk2 tbsp lemon juice1 ½ tbsp grated lemon zest
Preheat oven to 350F
Mix flour, sugar and salt.
Beat egg yolks with soymilk, add to dry ingredients.
Blend in lemon juice and rind.
Beat egg whites until stiff.
Fold egg whites into lemon mixture.
Immediately pour into a large greased ramekin or high-sided baking dish.
Place in a hot water bath and bake 45 minutes.
Serve chilled.
