Leftover Turkey Stirfry

Ingredients
2 c. brown rice (cooked)2 c. leftover turkey (i use a combination of light and dark meat)Chopped veggies (I use 1 cup each of carrots, onion, celery, broccoli, but you can modify this recipe for any veggies you choose)Salt, Pepper, Herbs (I use fresh thyme, and a dried "poultry seasoning" which is parsley, thyme, rosemary, and a couple other herbs)1/4 c. turkey broth (you can also use chicken broth, chicken boullion, or even a little water)
Directions
Makes 2 servings.

Cook your rice and set aside. Chop your veggies and turkey into similar sized pieces. Heat oil in pan, and stir fry veggies. Add turkey and herbs. When nearly finished, add turkey broth (or chicken stock or boullion). Taste, and add salt and pepper as needed.

To serve: Each plate gets a cup of brown rice, and then is topped by half the turkey-veggie mixture. Spoon whatever pan sauce remains over.
