Vegan Sloppy Joes

1 cup Carne de Soya (textured vegetable protein in large chunks) approx.1 cup tomato sauce (1 small can)6 Tbs (1/3 cup) ketchup1/2 medium white onion, chopped1 tbsp vegetable oilgarlic powder or fresh garlicvinegar, optionalhamburger buns
In a pan, heat up oil and add chopped onion and garlic. When onion is translucent, add carne de soya (soy protein) and around 1/4 cup of water. Let the soy soak up the water, then add the tomato sauce and ketchup. Simmer over low heat, covered, for 5 to 15 minutes. Add water as needed to keep the mixture moist, and stir.
If the taste is "beany" add some vinegar to taste, mixing thoroughly. Salt to taste, but you generally don't need any.
Mash with back of spoon to get a more "sticky" texture.
Spoon into buns and serve.
Serving Size: Enough for 4 sandwiches.
