Easy Enchiladas

Ingredients
Directions
1 Large can of Cream of Mushroom24 Corn Tortillas (from anywhere)1 sm bag of Shredded Cheese (2cups)1 Small can of sliced Black Olives1 Small can of Super Sweet Corn3 lbs Chicken Thighs
Boil 3lbs of chicken thigh with skin in large pot on High-Med
Spice broth ((Optional) I use Garlic Powder, Dried Onions, Onion Powder, Black Pepper, Chicken flavor by Mrs. Dash Grilling Blends)
Cover and Boil approximately 20 minutes.
Take out of the pot and set on cutting board to cool
Remove skin, bone and additional fat from Chicken
Dice Chicken in to random sizes and set aside
Layer 6 Corn Tortillas on bottom of pan
Drop Cream of Mushroom on top and spread over tortillas
Sprinkle Sweet Corn, Chicken and some cheese
Layer 6 more Corn Tortillas, Repeat above steps
add in Black Olives
Layer 6 more Corn Tortillas, Repeat above steps minus the Olives, add remaining Chicken at this time.
Layer last 6 Tortillas,COM, Corn, Olives,Cheese
Bake 450 until top layer of cheese is golden brown or crispier (to your liking)
Let stand 5-10 minutes and serve.
Serving Size: 12 2x2in squares from a 9x11in pan
