Garlic, 2 clove Lemon Juice, 2 tbsp Quinoa, 1 serving Cucumber (with peel), 1 cucumber. sliced and halvedBell Peppers, 1 cup, chopped (green/red/yellow mixed) Broccoli, fresh, 1/2 cup, chopped, lightly steamed Extra Light Olive Oil, 1 tbsp
Cook quinoa until light and fluffy, generally about 10-15 minutes, over medium heat. As quinoa cooks, make dressing with the oil, garlic, lemon juice and salt/pepper. Allow quinoa to cool once cooking is complete. toss with peppers and cucumber and add dressing. Mix well. Serves 8
