High Fiber Bran and Prune Muffins

Ingredients
• 1 cup Wheat Bran • 1 cups Whole Wheat Flour• ½ cup Millet Flower• 1/2 cup Chopped Prunes• 1/4 cup of Chopped Walnuts• 1/2 cup Applesauce• 1 tsp Baking Powder • 1 tsp Baking Soda • 3/4 cup Light Soy Milk • 1/2 cup Agave Nectar • 2 Tbsp Refined Melted Coconut Oil• 1 Tbsp Flax Meal & 3 Tbsp Water• 1 tsp Vanilla• 2 tsp Cinnamon• ½ tsp Cardamom
Directions
Stir together: bran, flour, cardamom, cinnamon, soda and baking powder. Then stir in walnuts and chopped prunes and set aside. Blend milk, agave nectar, melted coconut oil, applesauce, vanilla and flax meal. Add to dry ingredients and stir JUST UNTIL MOISTENED. Spoon into greased muffin tins and bake in preheated 400 degrees oven for 15 minutes or until muffins pull away from sides of cups.

    I made these but I did not use Millet FLOWER
    The muffins were odd but tasted great. I assume the Millet is FLOUR. They were a bit tough. - 4/20/17
