Lianne's Fat Fast Mini Cheesecake

2 8oz block Cream Cheese (full fat)4 egg yolks1/4 C equivalent liquid Sucrolose (you could use Splenda Granules but that will add carbs)splash of vanilla
Preheat oven to 350
Microwave cream cheese in a medium sized bowl. Separate egg yolks and whites. I stored the whites for later, to make sugar free chocolate meringue. Whip the egg yolks, sweetener with a dash of vanilla and the cream cheese until smooth.
Portion out the batter into 9 pre-greased muffin tins (I used Pam).
Bake for 20 minutes. Let cool before transfering to fridge. Serve cold, and enjoy!
