Garlic & Gorgonzola Cole Slaw with Healthy Mayo

Ingredients
For the HEALTHY MAYONNAISE FIRST: ( 10 oz )1/2 cup vegetable (corn) not CANOLA oil1/2 cup liquid coconut oilJuice of 1/2 lemonDash of salt1 eggBlend all but the oil in a food processor and then keep the top hole open and pour the oil over the top as it blends slowly over the period of about 1 minute. Even people who hate mayo will like this and it is WAY healthier than what you can buy in a store.THENTake 1 large head of cabbage, shredded1 cup of Mayo (see above)1/2 cup red wine vinegar and stir in 1 tsp of minced garlic4 oz gorgonzola or other shredded blue cheeseSalt and pepper dash to tasteDash of garlic powderMix all together and ENJOY 6 servings.
