Fresh Fava Bean Salad

Ingredients
4 green onions, thinly sliced12 oz. fava beans in pods2/3 cup plain lowfat yogurt1 teaspoon fresh mint, chopped1 garlic clove, sliced1/2 cucumber, peeled and sliced
Directions
1. To reduce pungency of onions, rinse slices briefly under running cold water and drain well.
2. Shell the favas and discard the pods.
3. In a medium saucepan, bring 2 quarts water to a boil and boil fava beans for 8 minutes or until tender.
4. Drain beans and rinse under cold water. Pierce the favas and squeeze them out of their outer white skins.
5. In a small bowl, combine yogurt, mint, garlic and cucumber. Add beans and onion, toss until well-coated, and then serve.
Serves 4.

    I loveeeee this salad. It's a little heavy on red onion, and feel free to switch out the fava beans for another depending on your preference, but all in all it is absolutely delicious and very filling. - 4/12/08

    i changed the fava beans to chickpeas and it's delicious.. and i used less onions. i also put it in a wrap with some steak and it was delicious :) one of my favourites. - 4/2/08

    Favas, Chick peas, Garbanzos...all the same thing. Try an extra garlic clove, dill and black pepper instead of the mint. A splash of lime juice is nice too. - 3/9/08

    Even after rinsing the onions they were still too strong. Fava beans were had to find. Ended up using canned ones. Not my taste for a very good salad. I agree w/previous comment waste of calories - 5/19/09

    I really liked this when I ate it with wild rice. Nice change of pace from the average meat and potatoes. Since I don't like raw onions I caramelized them and mixed them with the rice instead of this salad. I'll definitely eat this again. - 1/5/09

    I used canned fava beans instead of worrying about finding fresh pods. I think that the recipe was ok, but could definately use some added salt and pepper to make it taste a little better. - 4/14/08

    I'm not sure I see why we need to pod the fava beans and then cook them. Can't we microwave the beans and then pod them? BTW, are fava beans similar to edamame? - 4/11/14

    I liked it. I couln't find fava beans so I used light red kidney beans and I used a yellow onion instead of a red onion. I left out the mint and used greek yogurt. It was good. I ate it with corn, sweet peas, and brown rice. Next time I am going to add the sweet peas to the salad for better taste. - 12/26/09

    Since I can never find fava beans (what are they?) I used edamame beans. I think it will be better with a few sunflower seeds so I'll add some nex time I use this recipe. - 8/31/09

    Like other people commented...onion taste is TOO strong.
    I exchanged the fava for lima and cut them in half...starchy!
    I would suggest: Place all the ingredients in the fridge before serving, to blend flavours...maybe an hour or two...

    I would use canned garbanzo beans - washed and rinsed, as they are mild, and add dill instead of mint, reduce the yogurt. MMM can't wait to make this for lunch! - 3/9/08
