Cilantro-Lime Chicken w/ Avocado Salsa over Saffron Rice

Ingredients
2 tbsp minced fresh cilantro2 1/2 tbsp fresh lime juice1 1/2 tbsp olive oil4 skinless, boneless chicken breast (thin sliced)1/4 tsp saltCooking spray1 cup chopped plum tomatoes (about 2)2 tbsp finely chopped onion2 tsp fresh lime juice1/4 tsp salt1/8 tsp ground black pepper1 avocado, peeled and finely chopped3 cups saffron rice
Directions
Combine first 4 ingredients in a bowl, toss and let stand for 3 minutes. Remove chicken from marinade. Sprinkle Chicken w/ 1/4 tsp salt. Heat a grill pan and coat with cooking spray. Add chicken to pan and cook 6 minutes on each side or until done.

Combine tomato and next 4 ingredients (through pepper) in a medium bowl. Stir. Add avocado and stir gently. Serve salsa over chicken

Cook saffron rice for about 20 minutes or until done.
