Spicy Thai Fish Tacos

Ingredients

1/4 cup cilantro chopped1/4 of a medium onion chopped1/8 cup of low sodium chicken broth1/8 cup lime juice (fresh or bottled)2 tbsp of fresh salsa (store bought is fine)1tbsp of Spice Island Thai Spice (or to taste)dash salt and pepper1 pound dover sole1/2 cup shredded lettuce1 cup shredded low fat cheddar cheese20 6 inch corn tortillas
In a skillet pour broth, lime juice, chopped onion, cilantro, salsa, Thai Spice and salt and pepper.
Turn heat on high and let come to a boil. Lower heat and add the sole. (You can make this spicer by adding more Thai Spice or red chiles)
Let it simmer until fork tender. Remove from heat and keep warm in serving dish.
Warm tortillas (either in microwave or by heating skillet and placing them 10 sec on either side).
To serve: Place about 3 oz of fish in each taco, add shredded lettuce and cheese.
Makes 8-10 servings
Note: use two tortillas per taco.
