Creamy Apple Cider Cucumber Salad

2 Cucumbers (I used burpless from my garden), sliced julienne1/2 medium onion, sliced julienne2 tsp garlic powder1 T dried parsley to garnish1/4 C Apple Cider Vinegar4oz Cream Cheese1/2 C Grated Parmesan Cheese
After cutting the veggies julienne, drain cucumbers and onions on paper towel to take out some of the moisture. Set aside.
Microwave cream cheese in a medium bowl and nuke for 40 seconds. Add parmesan cheese and apple cider vinegar and stir until smooth.
Combine veggies and dressing. Serve and enjoy or allow to set and cool in the fridge.
