Terriaki Chicken With a Twist

1 Cup Dry Quinoa1 Bag frozen veggies (I used Bird's Eye Carrots, Broccoli & Cauliflower, 4servings per bag)8 ounces chicken4 ounces Terriaki Sauce1/2 Can Crushed Pineapple in Pineapple Juice (no sugar)For people with a sweet tooth - add 1 tsp packed brown sugarSprinkle Garlic PowderSprinkle Onion Powder1 TBS Olive or Canola Oil
Cut up chicken into four equal servings. Heat pan with oil, garlic powder, onion powder (or use real garlic & onion) Add in Chicken and cook until well browned on both sides, mostly cooked. Add in Crushed Pineapple, Terriaki Sauce & brown sugar if used. Cover and let cook on medium-low heat for 15 minutes. Cook the Quinoa as directed on package (mine was 1 cup quinoa/2 cup water for 12 minutes). and once cooked let sit until ready. Add in Vegetables (frozen or fresh) to the Chicken and stir. Cook over medium heat until Vegetables are done cooking. Separate Quinoa into four servings, top with one serving of vegetables and one serving of chicken. My daughter did ask that I cut up my chicken into small pieces next time (which would be yummy but harder to determine portions).
