Creamy Polenta Pie

Ingredients
1 cup dry polenta3 cups watersalt1/4 cup grated parmesan2 T feta (optional, topping)
Directions
Preheat oven to 350. Boil water. add polenta slowly and stir frequently, approx 15 min. Use non-stick cooking spray and grease a 9" pie plate. Pour polenta into plate and spread evenly. Top with the feta. Bake in oven for approx 15-20 min or until set. Let cool slightly before cutting and serving. Makes 8 wedges.
