2 cups cut okra, fresh or frozen1 medium onion, chopped2 large tomatoes, chopped1 seeded, chopped hot pepper OR red pepper flakes to taste 1 tsp. sugar1/2 tsp black pepper1 beef bouillon cube1/2 cup water2 tbsp olive oil
Using a heavy frying pan, heat oil and cook okra until no longer "ropey".
Add onion and pepper, cook until tender.
Add tomatoes and seasonings.
Dissolve bouillon cube in warm water and add to pan.
Cover and cook on low about 30 minutes or until okra is done.

HYDRATE
I make somthing similar and call it bhindi bhaji (which means okra curry). I add tumeric and cumin (a little whole and some ground) and some garlic. I use very little water to cook the okra and a dash of lemon juice to assist with removing the stickyness (add just before okra is cooked). YUM - 8/29/08

PATPENDING
I love okra and this is excellent. I often use a 16 ounce bag of frozen whole okra, some bell pepper slices and banana pepper rings. First I saute onions; add tomatoes and peppers; put okra on top. Add a little water if dry, cover and simmer until okra is tender but still bright green-no slime. - 2/12/13
