Spinach in coconut milk

1/4 cup coconut milk2 (10oz) pkgs fresh spinach2 tbsp shredded parmesan cheese1 Medium onion, diced2 pimento peppers, chopped1 stalk celery, chopped3 tbsp fresh chives, chopped1 tsp salt
Pour coconut milk in saucepan on low flame
Wash and add spinach
Cover and let simmer for about 5 mins or until spinach shrinks
Add seasonings
Let simmer for another 10 mins
Stir in parmesan cheese, remove from stove Serve hot
Makes 6 (1/2 cup) servings
Great side dish with chicken, fish or beef
