1 cup broccoli1/2 cup cauliflower florets2 T carrot, finely grated2 T cabbage, finely grated2 T yellow squash, finely grated1/4 cup Barbecued Onions (see below) (optional)2 pitas-whole wheat, whole-wheat tortilla, or chapatti1 T light mayonnaise1 small dill pickle-low sodium, cut into slivers1/2 cup romaine lettuce, finely shredded1/2 cup sprouts – alfalfa or quinoa2 slices avocado (optionalBarbequed onions for Goodwich:2 t safflower oil1 small onion, sliced2 T Hain or Robbie’s barbecue sauce
Cut broccoli into thin lengths, using only florets and upper portion of peeled stalks. Break cauliflower into tiny florets. Place broccoli and cauliflower in vegetable steamer, covered over boiling water for 5 minutes or until vegetables are vibrant and tender when pierced with a sharp knife. Remove from heat, Combine carrot, cabbage, and squash and mix thoroughly.
Preparing the barbecued Onions: In a small non-stick skillet heat oil. Add onion and sauté until softened. Add barbecue sauce and continue sautéing, stirring frequently until onion is thoroughly wilted. Cool well.
Combine all remaining ingredients with vegetables and onions. Mix well and stuff into pockets. Makes 4 Goodwiches.
