Simple Summer Squash

Ingredients
2 cups Chopped Zucchini2 Cups Chopped Yellow (summer) Squash1 Cup Chopped Onions1 Cup Chopped Sweet Peppers (Any Color)3 Cloves Chopped Garlic1 Tablespoon Olive Oil1 Cup Sliced Mushrooms4 Tablespoons Parmesan Cheese
Directions
In a large nonstick pan saute over medium low heat, saute olive oil and garlic until garlic is soft, about 2 minutes, being careful not to burn garlic. Add mushrooms and onions continue cooking for 2 or 3 minutes. Add squash, peppers and tomatoes, simmer for about 5 minutes until heated through, or until disired doneness.(I like my veggies crisp) Garnish with cheese and serve as a side dish or over pasta or rice for a meal.
