Carrot Apple Salad

Ingredients
2 tablespoons Vegenaise2 teaspoons packed brown sugar1/2 teaspoon apple cider vinegar2 cups grated carrots1 medium apple, chopped1/4 cup walnuts, broken
Directions
In a salad bowl, mix together the vegenaise, brown sugar, and vinegar. Then stir in the carrots, apple and walnuts. Serving size is 1/2 cup. This recipe makes about 6 servings.
Variation: You can add raisins, but you will have to count the nutrition separately -- I didn't include them.
(My mom made this all the time -- except she never measured anything -- and of course she used mayo or miracle whip for the Vegenaise.)
