Indian-Style Spinach + Chick Peas

Ingredients
8 cups spinach 1 tsp olive oil1 cup diced onion1/4 tsp ground ginger3 Tbsp minced garlic2 cups chickpeas beans, drained and rinsed 2 tsp curry powder 1/2 tsp crushed red pepper flakes1 cup fat free greek yogurt
Directions
Bring a large pot of water to a boil, toss in the spinach and blanch for 1 minute until very tender. Dump the spinach into a colander and press firmly with the back of a spoon to extract as much water as possible, set aside.

Heat olive oil over medium heat and sauté the onions, and garlic; cook and stir for about 5 minutes until soft. Add the chopped spinach, garbanzo beans, ginger, curry powder and red pepper flakes. Cook until heated. Shut off the heat and stir the yogurt into the spinach and bean mixture. Season to taste with salt and pepper.
