Ingredients
1 lb red potatoes, quartered with skin2 tbsp extra virgin olive oil1 cup chicken stock1 oz grated romano cheeseground black pepper to taste
Directions
Boil potatoes until very tender
Heat chicken stock to a simmer
Smash potatoes and add remaining ingredients
Stir until incorporated
Add pepper to taste
