Kerry's Chicken Salad

Ingredients
one package (usually three to a package) chicken breast1 cup diced celery1/2 cup diced onion1/2 cup chopped walnuts1 red delicious apple, diced (I leave the peel on)1 cup light mayo (don't let the amount of mayo keep you away, its divided up over several servings)
Directions
Boil chicken until done, shred or cut up. To the chicken add the rest of the ingredients, mix well. Can be eaten by itself, on a lettuce leaf, low carb wrap or bread.
