Leftover hambone with ham on it, about 1 poundI package dried butterbeans (large limas), 1 pound3 carrots, peeled and sliced2 onions, diced small2 ribs celery, peeled and sliced thinSalt 1 tbspquart water
Soak dried beans overnight in 1 quart of water or used quick method(place in 1 quart water, bring to the boil. let boil 1 minute, remove from heat and let sit two hours). To the pot add hambone(straight from the freeezer or fridge), carrots, onions, celery, and salt. Return to the boil then turn down and simmer 2 hours or until beans are tender and ham is falling off the bone. Remove hambone from the pot; after it cools, cut ham off the bone, dice finely, add back to the pot. Serve with salt and pepper to taste, with greens and cornbread.
