Stir-Fried Spicy Chicken Tenders

1 tsp sugar1 tsp paprika1/2 tsp salt1/2 tsp freshly ground pepper1/4 tsp cayenne pepper1 lb boneless skinless chicken tenders or breast cut into 2 in pieces1 tbsp canola oil1 package of Birds Eye (or equivalent) frozen pepper stir fry OR2 cups of chopped green, red and yellow bell peppers and onions.
1. Combine sugar, paprika, salt, pepper and cayenne in a medium bowl. Add chicken and toss to coat. Cover and refrigerate for 15 minutes or overnight.
2. Heat oil in a large nonstick skillet over high heat. Add pepper and onion mix and cook, stirring occasionally, until the vegetables are soft (approx. 5-7 minutes). Add the spice rubbed chicken and cook, stirring until no longer pink in the center (approx 4-5 min). Serve hot with brown rice.
