Clam Chowder - 7-31-2011

Ingredients
3 cups whole milk (substitute 2% or skim if you want)3 medium potatoes, white or red2 cans of chopped clams 2/3 bottle of clam juice1 yellow oniondried thymeground white peppersalt3 1/3 cup of frozen corn
Directions
Chop potatoes into small squares, boil till soft in separate pot. While potatoes are boiling, finely dice onions, melt butter in soup pot. Saute onions in butter until translucent. Add canned clams with juice, clam juice, corn and spices. Bring to simmer. Turn heat to low. When potatoes are soft, strain them. Put half into soup. Mash the other half with .5 cup of milk, add to soup (to thicken). Stir in 2.5 cups of milk and let it warm through, doesn't have to boil cause you don't want to cook the milk.

Serving Size: Makes 8 good sized bowls
