Shannon's Summer Salad

Ingredients
Directions
1 c. uncooked long grain brown rice1 c. chopped tomatoes1 c. chopped cucumberDressing:1/2 c. olive oil1/4 c. fresh squeezed lemon juice (about 2 lemons)1 T. basil1/2 t. minced garlic
Cook brown rice as directed on package.
As brown rice is cooking, mix the ingredients for the dressing together and store in refrigerator for one hour so flavors can mix.
Allow to cool completely.
Mix in tomatoes and cucumber.
Pour dressing over rice/veggie mix and stir.
Enjoy!
