Zucchini Pita Pizza

Ingredients
2 whole wheat pita pockets, 4.5 inch2 Tablespoons spaghetti sauce1/4 cup feta cheese2/3 cup mozzarella cheese, part skim1/2 cup chopped fresh zucchini squash1/2 cup chopped green bell peppers1/4 cup chopped onions
Directions
Place pita pockets on a pizza pan.
Spread 1 TBSP of spaghetti sauce on each.
Divide all remaining ingredients between the two pizza ending in mozzarella on the top.

Broil about 6 inches from broiler until cheese is melted and brown.

    I'm sure you could substitute vegan mozzarella or vegan cheddar for both the cheeses. However if you are using dairy its not vegan. - 5/23/10
