Meatloaf Cupcakes

Egg, fresh, 1.5 large (remove)Skim Milk, 1 cup (remove)Kraft 2% Shredded Cheddar Cheese, 1 cup (remove)Breadcrumbs, 0.75 cup (remove)Ground beef, extra lean, 16 oz (remove)Mashed Potatoes, 208 grams (remove)Salt, 1.5 tsp (remove)Yellow Mustard, 2.25 tsp or 1 packet (remove)Ketchup, Heinz, 12 tbsp (remove)Brown Sugar, 0.15 cup, packed
Line a muffin pan with cupcake liners.
In a large bowl, combine the egg, milk, cheese, breadcrumbs, and salt. Add the ground beef, mixing well, and form this mixture into twelve miniature meatloaves. Place these in the cupcake liners.
In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
Bake, uncovered, at 350 degrees F (175 degrees C) for 40 minutes.
As the meatloaves cook, make the instant mashed potatoes. When the meatloaves are finished, use a pastry bag to decorate the meatloaf cupcakes with mashed potato "frosting." Top with chives.
Serving Size: Makes 12 "cupcakes"
