Sweet Corn Griddle Cakes

3/4 cup unbleached flour1/2 cup corn grits (or cornmeal)2 tbs sugar1 tbs baking soda1 tsp salt2 ears fresh sweet corn2 eggs1 1/4 cup buttermilk
Mix together flour, grits, sugar, salt, baking soda.
Whisk eggs with buttermilk.
Combine dry ingredients with wet. Husk the ears and cut off the corn kernels, mixing them into the batter.
Pour 1/4 cup ladles of the batter onto a hot, greased griddle. When the pancakes begin to bubble, flip.
Serving Size: Makes 12 cakes (from 1/4 cup ladles of batter)
