Low Fat Chicken Cacciatore

6 - 100 g(3.5 oz) chicken breasts2 tsp salt (to taste)1 tsp freshly ground pepper (to taste)8 fat free saltine crackers (Crushed for dredging)1 large red or green pepper, chopped1 onion, chopped3 garlic cloves, finely chopped1-1/2 c. low sodium chicken broth1 28 oz can diced tomatoes with juice1-1/2 tsp dried oregano leaves2 tsp chopped basil
Put 1/4 c. of broth in Slow cooker. Dip the chicken in another 1/4 c of broth and then coat with cracker crumbs. Add chicken to slow cooker. Mix remaining ingredients together and pour over chicken. Cook on low 5-7 hours. Serve hot by itself or over rice.
