Caramel-Apple Cookies

¼ c. margarine¼ c. apple butter1/3 c. brown sugar½ c. sugar1 pkg. instant spiced apple drink mix2 eggs1 c. flour2/3 c whole-wheat flour1 c. rolled oats½ tsp. baking soda1 c. dried apple, chopped30 caramel squares, unwrapped¼ c. vanilla soy milk
Preheat oven to 350 degrees F.
In mixing bowl combine the margarine, apple butter, sugars and spiced apple mix; beat until fluffy.
Add eggs and beat well.
Add flour, oats and baking soda to the egg mixture. Stir in the dried apples.
Roll dough into balls. Place dough on prepared cookie sheet and bake for 9 to 11 min.
Cool one min. and remove to wire rack to cool completely.
Combine caramel squares and soy milk in a saucepan over medium-low heat, stir until melted but do not boil.
Carefully coat each cooled cookie with caramel mixture, let set on wire rack.
