Easy veggie soup, prepared french onion soup style

4-6 cups vegetable/ chicken/ beef broth1 cubed potato 1 package (10 oz) frozen mixed vegetable 1 can kidney or white beans2 cans diced tomato2 cups fresh spinachseasoning to taste (suggested bay leaf, garlic salt/season salt, Mrs. Dash)
Bring broth to simmer and add potato, simmer ~3 minutes.
Bring to rolling boil, then add frozen vegetables, wait to return to low boil ~5 minutes.
Add beans and tomato, let simmer for ~20 minutes.
Add spinach and seasonings last, let cook for ~5 minutes.
Serve french onion soup style:
Put soup into oven safe bowl, put one slice of bread on top, then a slice of swiss cheese on top of that. Put under broiler until bubbly and delicious, ~2-4 minutes.
