Scrambled Tofu

1 block of firm tofu2 cups of sliced mushrooms1 medium onion1 tbsp of Olive Oil1 Medium Carrot, grated3 cloves of garlic, minced.5 lemon yield2 tsp cumin1 tsp ground thyme1 tsp Paprika1 tsp Salt
Do the spice blend from the paprika, salt, thyme and cumin and set aside
Cook the onions in the olive oil until soft, then add the mushrooms for around five minutes, then add the garlic for another two minutes, then add the spices for a little bit - then add the tofu, just crumble with your hands so it's chunky - cook for 15 making sure it does not stick, but not moving too often so it won't crumble the tofu too much - then turn off heat, add the lemon and then add the grated carrot, serve! YUM!
