Quinoa Summer salad

Ingredients
*Ancient Harvest Traditional Whole Grain Red Quinoa, 1 serving =.25 cup dry, 1 cup *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" Green Peppers (bell peppers), 1 cup, chopped Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) *Yellow Sweet Corn 1 can drained*Beans, Kidney beans dark red 3 serv can, 3 serving *Extra Virgin Olive Oil, 1 tbsp Scallions, raw, 1 cup, chopped Cherry Tomatoes, Fresh, 20 Salt, 1 tsp Pepper, black, 1 dash *Lemon Juice, 1 fl oz Lemon Peel, 1 tsp
Directions
Wash and rinse 1 cup red quinoa. Cook in 2 cups water/ broth for 20-25 minutes. Cool and keep aside. Dice peppers, tomatoes, scallions and mix in large salad bowl. Drain and rinse red beans and corn. Add to the vegetables. Squeeze 1 tbsp lemon juice, grate lemon zest. Add olive oil, salt and pepper. Serve as a main dish or as an accompaniment for grilled vegetables/ meat.
